On this day in 1836 a few dozen Texians gathered together in Washington, Tx. to declare independence from Mexico. Just days later the Alamo fell and hundreds more were killed in Goliad. Those defeats gave rise to the famous battle cry, "Remember the Alamo! Remember Goliad!" at the Battle of San Jacinto where we finally defeated Gen. Santa Ana and earned our independence.

The Republic of Texas was a sovereign nation from 1836 until 1845 when it joined the Union as the 28th state. But that maverick attitude still lives on in many Texans today. As author John Steinbeck once said, "Texas is a state of mind."

Though I only spent four years there, and I haven't been back in over a decade I still answer "where're you from?" or "what's that accent?" with TEXAS. (Part of that is that the only other honest answer would be Oklahoma...haha).

1. I'm good with any beef or pork. Especially ribs. Preparation depends, but can't go wrong with a good slightly spicy dry rub. On the other hand I also like being able to taste my food for days with some good sauce.

2. Me, I like Cherry or Apple wood. I don't care for gas, I'm not Hank Hill.

3. Neither, can't stand it.

4. What is "Deep in the heart of Texas"

The correct answers were:

1. Beef. Specifically a brisket smoked for at least 12 hours. Dry rub on the brisket would be appropriate. It shouldn't need a sauce, though, but if you have one, it should be homemade and include honey as one ingredient. Smoked turkey, beef fajitas, and venison also would have been acceptable. Pork BBQ is for the Carolinians. That's not BBQ.

2. Wood is correct. But some wood is more correct than others. I would have accepted mesquite, pecan, or hickory as a last resort. I might make an exception for applewood.

3. Sweet tea. The answer is always sweet tea. I've already given away one sweet tea waiver to CamaroBoy68, who prefers coffee or beer. In that regard, what beer would you choose? Or would you prefer lemonade? Fresh squeezed lemonade is also acceptable.

Lastly, yes! The only one you got full credit on.

You may not want to tell your mama how you fared on this quiz, because she might cry and we can't have that.

If you study up a little more, you might pass and become a true Texan after all. Study the following for the next quiz: what is the state flower? The state tree? Chili: beans or no beans? Which is bigger— the Capitol rotunda in Austin or in Washington, DC? What is the proper way to measure distances in Texas— using miles or hours?

Oh definitely lemonade. Chili, in my opinion, is no beans. The way God intended. And obviously you measure in hours. That's about the way we do it here too.

Rotunda's larger in Austin. That was on a gut feeling and confirmed with searching.

Flower is Bluebonnet, Tree is Pecan. Those I didn't know.

Maybe I'm too much of a Pennsylvanian.
